  • 75g grape tomatoes, halved
  • 10g freshly chopped coriander
  • 120g soured cream (optional)
  • 1 tablespoon sriracha sauce (optional)

  1. Season steak with garlic salt and black pepper.
  2. Heat 1 tablespoon olive oil in a large pan over medium-high heat. Add steak; cook until browned, 4 to 5 minutes per side. Transfer steak to a cutting board and let rest, about 5 minutes. Slice into thin strips.
  3. Slice courgettes, carrot and radishes into ribbons using a spiraliser.
  4. Heat remaining 2 tablespoons oil in the pan over medium heat. Add carrot ribbons; cook and stir until lightly browned, about 3 minutes. Add courgette ribbons; cook, stirring constantly, until tender, about 5 minutes.
  5. Divide carrot and squash noodle mixture between 2 serving plates. Top with sliced steak. Garnish with radish noodles, avocado, grape tomatoes and coriander.
  6. Whisk soured cream and sriracha sauce together in a small bowl. Drizzle over serving plates.

This should get 10 stars. Five for the salad and five for the sauce! The salad is so nice, the flavors are perfect together, as well as the textures. Cook ground beef and white part of green onions in a large skillet over medium-high heat until meat is no longer pink and onions are soft and translucent, about 5 minutes. Remove from pan, drain, and set aside.

WHAT CAN I ADD TO RAMEN NOODLES?

This is a very adaptable recipe. I’ve used onion, garlic, ground beef (mince) and beansprouts because it requires minimal chopping. Finely sliced cabbage would be an ideal substitute for the bean sprouts, otherwise carrots cut into matchsticks, baby spinach or even normal spinach, or even finely sliced kale. Toss these in when the bean sprouts are added, just to wilt.

If using other vegetables that need to be cooked for longer that leach water when cooked, such as peppers, zucchini or mushroom, cook these first then remove from the pan (otherwise they leach too much liquid when the noodles cook so you end up with too much water). Proceed with recipe then toss them in at the end.


Frugal Recipe: Simple Beef & Veggie Egg Noodles

I’m going to bet that for a lot of you dinner can be a stressful thing. Lots of times it’s because recipes seem too overwhelming, or you’re running out of time, or you simply don’t know what to prepare. I wanted to start giving you all one recipe a week that’s simple these recipes will:

1. use ingredients you already have in your pantry or ones that aren’t hard to find in your regular grocery store,
2. not take forever and a day to make,
and
3. most importantly, fill your family up.

This recipe for beef and veggie egg noodles was sort of made on a whim. I didn’t really have a plan for dinner, but I did have all of these ingredients in my pantry/freezer. So, I stuck them all together and guess what? It was delicious! My family loved it and it was super simple and quick.

Simple Beef & Veggie Egg Noodles

8 oz egg noodles
½ lb ground beef
1 cup frozen peas and carrots
½ cup mushrooms, cleaned and sliced
4 tbsp unsalted butter
salt, to taste
pepper, to taste
1 tbsp italian seasoning

1. Cook the egg noodles in a pot of salted, boiling water according to package directions.
2. In the meantime, in a large skillet over medium heat, brown the ground beef. Remove any excess fat from the pan. Add the peas, carrots, and mushrooms and cook until tender, about 5 minutes.
3. Drain the egg noodles and add them to the skillet along with the butter, salt and pepper to taste, and italian seasoning. Stir to combine as the butter is melting (it will serve as a sauce) and serve hot.


Lasagna Recipes: Lasagna with Veggie “Noodles”

This is one of my favorite lasagna recipes. Lasagna is one of those delicious classic Italian recipes and this one comes with a twist.

Simply replace the cooked noodles with slices of zucchini or eggplant! Lots more nutrition, fewer calories and carbohydrates, and great taste.

To make it vegetarian, just leave out the ground beef.

This lasagna recipe is great for someone who wants to cut some of the carbohydrates from a meal like lasagna, cut the calories, or just try something different.

It’s also a wonderful way to get more vegetables into a meal.

It’s a terrific healthy cooking recipe. To make it healthier, do what I suggest above in the tips. Sprinkle the top of each layer with some grated Parmesan cheese, and save the grated mozzarella for the top layer only. You still have that ooey goodness, but just on top. It saves a lot of calories and fat and makes the whole dish lighter.


  • 3/4 cup + 2 tablespoons low-sodium soy sauce separated
  • 2 tablespoons hoisin sauce
  • 2 and 1/2 tablespoons minced garlic separated
  • 3 tablespoons + 1 teaspoon cornstarch separated
  • 1 pound flank steak
  • 3-5 tablespoons vegetable oil separated
  • Assorted veggies: 8 ounces sliced mushrooms, 8 ounces snap peas, 1 cup shredded carrots, 1 red bell pepper
  • 2 packages 3 ounces each ramen noodles
  • 2 tablespoons sesame oil
  • 1 cup low-sodium beef stock or broth
  • 1 tablespoon minced ginger
  • 1/2 cup brown sugar* packed
  • 1/2 - 1 full teaspoon red pepper flakes

Step 1

1.OPTIONAL: marinade the meat. Toss together 1/4 cup soy sauce, hoisin sauce, and 1 tablespoon minced garlic. Very thinly slice the flank steak against the grain into 1/4th inch thick strips and then into 2 inch pieces. Place the steak pieces in the marinade and set out at room temperature for 20-30 minutes. OR cover tightly and place in the fridge for up to 8 hours. If you want this to be a true 30-minute dinner, skip this step!

2.While the meat is marinating, prep and cook the veggies. Place 1 tablespoon oil in a large skillet or wok and add in the sliced mushrooms, snap peas, shredded carrots, and chopped red bell pepper. Cook over medium high heat until crisp tender and transfer to a bowl/plate.

3.Remove the meat and drain off any remaining marinade. Toss the meat to coat with the cornstarch in a large plastic bag. Alternatively use your fingers to work the cornstarch into the meat. Make sure all of the meat is well coated in cornstarch.

4.Add another tablespoon of oil. Heat until the oil is shimmering and then add in 1/2 the beef so it can be in a single layer. Cook without moving until the beef is well seared, about 1-1/2 minutes. Continue cooking while stirring until the beef is lightly cooked but still pink in spots, about 30 seconds. Transfer to a plate.

5.Add in the last remaining tablespoon of oil to the pan and heat until shimmering. Add the remaining beef and cook without moving until the beef is well seared, about 1-1/2 minutes. Cook for another 30 seconds. Transfer the rest of the beef to the plate.

6.In that same skillet or wok, add in the sesame oil, remaining 1/2 cup + 2 tablespoons soy sauce, beef stock or broth, remaining 1 and 1/2 tablespoons minced garlic, minced ginger, brown sugar* (add to your taste preference, we like a lot of sugar in this dish), and red pepper flakes.

7.Stir and cook (uncovered) over medium heat until sauce thickens a bit and reduces by about a third (about 10-12 minutes). You don't want to reduce it too much so it can still generously coat all the noodles & veggies.


8.In a small dish, whisk together remaining 1 teaspoon cornstarch with 1 teaspoon water until smooth. Whisk into the sauce.

9.While the sauce is reducing, boil a small pot of water and cook the ramen noodles for exactly 2 minutes. Drain and rinse in cold water.

10.Add the cooked veggies, cooked meat, and drained ramen noodles into the sauce. Toss to coat and top with green onions. Add some cracked pepper and additional red pepper flakes if desired. Enjoy immediately.
