For ingredients you need:

2-3 large carrots, 4 large onions, 2 zucchini, 1 large red bell pepper, 1 green bell pepper, 400 gr. peas, A½ bag of soybeans, 1 cup (250 ml) with rice, 2-3 bundles of dill, 2 bundles of parsley, salt, pepper, vegetable oil, water and breadcrumbs to line the trays

Method of preparation

♣ Boil the soybeans in a bowl with water and a pinch of salt, over low heat, until they swell and soften. Wash the rice well and bring to a boil. Peel a squash, grate it and rinse the peas with cold water.

♣ Meanwhile, grate the carrot on the large mesh side, chop the onion and diced bell pepper. You can cut the zucchini into moderate-sized cubes, as desired. After cutting the greens as finely as possible, put in a pan of Teflon, onion and carrot, to harden, in about 100 ml of oil, over low heat, covering the bowl with a lid.

♣ Once the vegetables have started to soften, you can add peppers and zucchini, still keeping the bowl covered. If the vegetables run out of sauce, a little water can be added. After hardening the vegetables, you can put the peas, keeping the composition on the fire for about 3 minutes, after which you can let it cool.

♣ Put the boiled rice in a strainer, washing it with cold water. Drain the soybeans well, squeezing them, then, as well as possible, in your hand. Put the hardened and cooled vegetables in a bowl, adding the washed and drained rice, the equally squeezed soybeans, finely chopped greens, pepper and salt.

♣ Add 30 ml of vegetable oil to the mixture and mix until the composition is homogeneous. Grease two cake trays with margarine (preferably packaged margarine) and line with breadcrumbs. For baking, put the vegetable stew in a hot oven over medium heat.

♣ In the 60 minutes that the dough needs to bake, don't forget to turn the trays in the oven from time to time. When it has already browned, you can test it with a toothpick, which, if it comes out clean, will let you know that the dish is ready.

How to serve

It is recommended that the vegetable drop be left to cool in the form, after which it can be turned over on a tray or plate. You can cut it when it is completely cold, with a sharp knife. The recommendation of specialists is that the preparation should be kept in the refrigerator for at least 5 hours.


Soybeans

If you have excluded meat-based products from your menu and you have adopted a vegetarian diet, I will still recommend a dish made from soy.

Ingredients and quantities:

4 cans of soy pate - with or without flavors

2 onions
2 cloves of garlic
1 dill and one parsley
3 carrots

100 g cheese
oil

Method of preparation:

1. In the first phase, boil the rice in water to swell. Then, next to it are the soy pies, finely chopped onion, green garlic, dill, parsley, grated carrot, a raw egg, canned mushrooms and diced cheese.

2. In the meantime, it is appropriate to boil the other two remaining eggs, which you will use inside the dish.

3 . The whole mixture resulting above is put in a tray, which you have previously lined with oil and flour. In the first phase, put half of the composition, then add the two hard-boiled eggs, and finally pour the remaining half. All this is left in the oven for 45 minutes, and after removing it from the oven, grate the cheese on top.


Textured soybean meal

The textured soybeans are boiled for 15 minutes in boiling water together with the thyme sprig. Bring to a boil over low heat. The juice is then drained and discarded.

Onions are cleaned, washed, finely chopped and sautéed for 1-2 minutes with a little oil.

The soy and onions thus prepared are placed in a bowl and the rest of the ingredients are added. Mix well. Put the composition in an oven tray (about 1/2 the size of the oven) and put it in the oven over medium heat, the oven being preheated. in about 50 minutes it is ready.

Pancakes with soy milk

ingredients

  • 400 ml soy milk
  • 250 gr flour
  • A spoon of sugar
  • 2 tablespoons oil
  • A teaspoon of baking powder
  • ¼ teaspoon of salt
  • Vanilla or orange essence

Method of preparation

All the ingredients are put in a food processor or mixed with the aim. Mix well and put the obtained composition in the refrigerator for a few hours or overnight. If you leave the composition in the refrigerator overnight, then you will add 2-3 tablespoons of mineral water.

After a few hours, remove the composition from the cold and put a frying pan on the fire. Add, in turn, a little dough from the pancake composition and leave it on the fire until bubbles start to form on top, and the surface is no longer glossy. Turn the pancake over on the other side and leave it to brown, but without burning.

Panna cotta with soy milk and fruit jelly

ingredients

  • 300 ml soy milk
  • 200 ml sweet cream 12% fat
  • 50 gr sugar
  • 10 gr gelatin
  • The core of a vanilla pod.

  • 700 g of frozen berries
  • 250 ml of water
  • 100 gr sugar
  • 9 sheets of gelatin
  • 3 tablespoons lemon juice.

Method of preparation

In a bowl, mix the soy milk, sweet cream, sugar and vanilla kernel and simmer until it starts to boil. Meanwhile, the gelatin is soaked in cold water.

When the mixture on the fire is hot, take the pot off the heat, add the soft gelatin sheets and mix well until the gelatin dissolves completely. Allow the mixture to cool.

Prepare the glasses in which the panna cotta will be placed. They are placed on a towel, then, when the composition has cooled, it is added to the glasses. Place the glasses tilted with panna cotta cream in the refrigerator for at least 4-5 hours before serving or until it is very well bound.

To prepare the jelly, put the berries in a bowl and leave them on the fire until a concentrated syrup is formed, then strain everything through a gauze, without pressing on the fruit.

In the syrup add 9 sheets of gelatin that you have previously soaked in water, then mix everything well until the gelatin melts. The jelly is allowed to cool very well.

When the panna cotta has hardened in the fridge, remove the glasses and add the cooled jelly to the side of the panna cotta cream, otherwise the two layers will intertwine.

Creamy soy milk cake

ingredients

  • 400 ml vanilla-flavored soy milk
  • 4 eggs
  • 300 g of sugar
  • 250 gr flour
  • 150 gr butter
  • 150 gr cocoa
  • A sachet of baking powder.

Method of preparation

Beat the egg whites with a pinch of salt and rub the yolks separately with the sugar until a glossy cream is obtained. In the yolks add the soft butter, at room temperature, and mix well with the mixer. Add the soy milk over it, mix again, then add the flour, baking powder and cocoa and continue mixing until everything is well blended.

Add over the beaten egg yolks and beaten egg whites and mix with a spatula, with movements from top to bottom, so that no air comes out of the composition, until the egg white foam is well incorporated.

The obtained composition is placed in a tray that you have lined with baking paper, leveled on the surface and everything is put in the oven heated to 180 degrees C for about 25 minutes.


Preparation:

1. Composition:
Carrots, celery, potatoes and white onions are cleaned, washed well, cut into appropriate large pieces and boiled. Boil the soy texture for 15 minutes separately from the vegetables. The rice is boiled for a few minutes. When they are cooked, drain well and leave to cool, then the carrots together with the celery, potatoes and onions are passed through the machine. Add the beaten egg, salt and pepper, ground mosaic pepper, dried mushrooms, dried thyme, oregano, dried dill and dried parsley. Mix until this composition is homogenous then add the well drained rice and the well drained soybean grain texture. Knead the resulting composition lightly until it becomes homogeneous. Finely chop the red onion and add it to the composition, stirring again.

2. Dough:
Beat the beaten egg, add 1 cup of milk, salt, baking powder dissolved in apple cider vinegar, melted butter, then sprinkle with flour in the "rain" and mix until a hard enough crust is obtained to be processed. with the twister. Sprinkle a little flour on the work table, knead the dough, taking care not to thicken it too much. Spread the dough with the rolling pin until it is shaped according to the bowl that will go in the oven (preferably a pan or a round tray), and when the dough sheet is ready (about 5 mm thick) roll it on the rolling pin it is rolled from the twister into the vessel, taking care that the edges of the sheet cover the vessel all around and on the outside. Add the vegetable composition to the dough sheet.
Careful! If you fill the sheet before putting it in the bowl, it will be much harder to move it in the bowl) cover it with the edges of the dough sheet, grease it with egg white and pour a little more melted butter on top. Put in the oven over medium heat and bake for 20-25 minutes until browned (it's ready when it has a golden color!) Before removing the dough from the pan, cover with a lid and keep covered for about 15 minutes. to steam and to facilitate the detachment from the walls of the vessel.

9. Place in the oven at 180 degrees (stage 6) for about 45 minutes). Remove and leave to cool in the pan.
