What's really inside your morning cup of joe?

Sure, The Daily Meal staff probably collectively drinks 50 cups of coffee a week, but we never really bothered to find out what's in it (other than caffeine and maybe a shot of vanilla syrup and some milk). So thankfully, Wired came up with this cute little animated video, breaking down what's exactly in an average cup of coffee.

Turns out, most of coffee is water (well, so, we knew that), but the rest? Long, complicated chemicals like 2-Ethylphenol, which has a tar-like odor and is actually a cockroach pheromone that warns other cockroaches of danger. Not exactly appetizing, but if your pantry has tons of coffee maybe you won't have any cockroaches in your house.

The good stuff, on the other hand, includes acetylmethylcarbinol, a component of butter, which gives the coffee a "buttery" taste. Trigonelline gives coffee an earthy taste, and also fights cavity-causing bacteria, and caffeine of course gives your brain a boost of energy. Not to mention, coffee is also an antioxidant. So in this case, maybe we should say coffee is better than tea? Unless, of course, Wired comes out with a tea video.

The Only Aeropress Recipe You’ll Ever Need

The Problem with most Aeropress Recipes

There’s few questions a barista dreads more than “Could you grind this for Aeropress? While you can always count on an espresso to use a fine grind and a fast brew time, and a French press the opposite, Aeropress recipes are all over the map, and most are terrible.

First, completely disregard the recipe on the box. No disrespect to the legendary inventor of the Aeropress, Alan Adler, but the whole notion of using lower temperature water to have a less acidic coffee is flawed in several key ways. For one, acids dissolve before the more complex carbohydrates, so lower-temp brews are missing more than just acidity- they’re missing a lot of sweetness too. Secondly, acidity levels have a lot more to do with the coffee origin. (If you don’t like brighter, fruitier coffees, stick with Brazilian and lower elevation Central American coffees.)

But there’s also reason to be wary of many of the more popular recipes circulating out there. Many call for more an absurd amount of coffee, often a 10:1 ratio, or even stronger. While I’m sure that many of these recipes with the right coffee could make an interesting, even delicious cup of coffee, for people in the real world, who are using their hard-earned cash to purchase coffee, I question such an inefficient recipe. If you can make a delicious cup of coffee with 15 grams of coffee, why on earth would you waste another 5–7 grams?

That’s why I’m sharing my fourth place recipe from the 2016 US Aeropress Championship*. Sure, it wasn’t quite good enough to book my ticket to Dublin for the World Championship, but it’s surprisingly versatile and pretty simple. You’ll need an Aeropress, a grinder, a scale, a kettle, and some coffee.

1. Grind 15 grams of coffee

You want to use a medium grind. Not too fine, not to coarse.

2. Place two rinsed filters in the Aeropress.

Double filtration helps keep any sediment out of your brew. If you really want to live life on the edge, you can use three (somehow, we never seem to run out of filters. It’s like they magically replenish themselves.)

3. Briskly add 225 ml. of boiling hot water. Quickly, but carefully, place plunger in Aeropress to create a vacuum.

This keeps the coffee from dripping. You need all the water steeping with the coffee to get the highest possible extraction.

4. At 1:00, remove plunger and gently break the crust with a spoon.

5. At 4:00 begin to slowly push the plunger down.

6. Decant and drink.

*The Aeropress Championship was founded as a sort of lampoon of barista competition culture. To use a wrestling analogy, It’s more WWE than UFC.

A layer of flavours with rum/liqueur, nutmeg, coffee and ice cream, topped off with coffee ice cubes!

A pinch of rum adds the flavour to this chilled coffee beverage.

6. Spiced Coffee

Whip up a cup of coffee made with a desi, ginger and aromatic cardamom. This one is a healthy and healing one that is packed with fresh flavours.

7. Mocha Cooler

For all coffee lovers, this is a scrumptious cooler made with the flavours of strong black coffee, cream and chocolate ice cream. Heavenly!

8. Instant Coffee

A refreshing cup of coffee made in a jiffy. This coffee can be your morning fix that can be prepared in just five minutes and in mere four ingredients.

Go on, get your dose of caffeine and kick start your day on a high note. The best part is that you can keep experimenting with different flavours to create a refreshing drink every single day if you wish.

Then, up to 8 artists will be selected from the finalists and notified on June 18, 2021. The chosen designers will be announced publicly in 2022 ahead of the product launch.

Coffee production is a big industry for one reason: coffee consumption is truly a universal affair with 2.3 million cups of coffee consumed globally every minute. By total volume sales, coffee is the fourth most-consumed beverage in the world.

That makes the retail side of the market a major factor. Dominated by companies like Nestlé and Jacobs Douwe Egberts, global retail coffee sales in 2017 reached $83 billion, with an average yearly expenditure of $11 per capita globally.

Of course, some countries are bigger coffee drinkers than others. The largest global consumers by tonnage are the U.S. and Brazil (despite also being the largest producer and exporter), but per capita consumption is significantly higher in European countries like Norway and Switzerland.

How to Make the Perfect Pour-Over Coffee at Home

If your quarantine beverage rotation goes from coffee to wine and back again, we&rsquore right there with you. Here&rsquos how to craft the perfect cup of pour-over at home.

Quarantine got you crazed for caffeine but unsure how to craft that just-right cup of coffee that your local café used to make you every morning? Before you go into panic mode and splurge on a zillion-dollar espresso machine, make yourself a pour-over. All you need is a kettle, a filter, and a pour-over cone—PSA: my favorite from Melitta costs $4—in addition to fresh ground beans of your choice. If you have a kitchen scale, even better, but you can measure your coffee out just as well (just be sure to follow the amounts below).

“Pour-over brewing is a simple way to brew a clean, bright cup,” says Patrick Main, the beverage innovator at Peet’s Coffee. “It brings out subtle nuances in coffee, particularly those with bright, sparkling flavors.” Here are Main’s simple, step-by-step instructions for brewing a balanced cup of pour-over coffee at home.

1. Heat fresh water to 200ଏ. To reach the right temperature without a thermometer, bring water to a boil and then let it stand for 30 seconds.

2. Measure 25 grams of freshly roasted coffee beans. This is about 5 tablespoons or 2.5 standard coffee scoops.

3. Fold down the seam of the paper filter and place it into the pour over cone so it lies flat. Then rinse the filter with hot water. Grind coffee to the coarseness of sand. “Rinsing the filter helps eliminate any paper flavors and preheating cone and carafe can help keep temperature consistent throughout the brewing process,” says Main. “Grind size also affects drip time and extraction. If your brew is too slow, try a slightly coarser grind. If it drips through too quickly, try a little finer.”

4. Discard the hot water and place the pour-over cone and carafe or mug you’re brewing into on your scale. Add ground coffee and then zero out or "tare" the scale. Pour just enough water (50 grams, or twice the weight of the coffee grounds) in a spiral motion to saturate the grounds, then wait 30 seconds. When hot water meets coffee grounds, CO2 escapes and expands, creating a "bloom." Once the off-gassing is complete, the grounds are more receptive to absorbing water, resulting in a better extraction of flavors.

5. At the 30 second mark, resume pouring water over the grounds until your scale reaches 400 grams and your timer reaches 2 minutes. Pour first in a spiral pattern, and then straight down, keeping coffee grounds fully saturated from start to finish.

How to Make the Perfect French Press Coffee

Making coffee with a plunger? Sure, at first it might seem a little intimidating and weird. And a French press requires a little more effort than basic drip or a Keurig machine, but it’s way easier than you think.

Trust us: If you can put a pod in a contraption and press a button, you can brew a French press to bring a “sacre bleu!” to the lips of any hardened Parisian.

So you’re waking up 3 minutes earlier make it? It’s so worth it. Immersing the coffee grounds in the hot water during brewing makes French press coffee richer, smoother, and more flavorful than most other methods.

“There’s no paper filter involved, which really allows the oils and flavor in the coffee beans to come through,” says Chad Moore, a Starbucks Global Coffee Engagement team member. We’ve heard they also do coffee.
