Countertop:

Beat the egg whites until stiff, then add the sugar and mix until it becomes shiny, like meringue. Add the yolks and mix lightly.

Mix the flour with the baking powder and cocoa and lightly incorporate it into the dough.

Pour the dough into a round tray (26 cm) lined with baking paper. Bake in the preheated oven, at 180 degrees, until it passes the toothpick test (~ 30 minutes). Remove the top on a grill and let it cool then cut it into two sheets.


Yogurt cream:

Mix the yogurt with the sugar until it melts. We hydrate the gelatin for 10 minutes in 3 tablespoons of cold water. Then melt the gelatin in the microwave for a few seconds.

Mix the gelatin with 2-3 tablespoons of yogurt, then add it to the rest of the yogurt and mix until smooth.

Beat the whipped cream well and add it over the yogurt. Stir gently until smooth.


Strawberry mousse:

We clean the strawberries and mix them in a blender. We then pass them through a thick sieve to remove the seeds.

We put the sauce on the fire together with the sugar and after it boils we add the broken chocolate pieces. Leave on the fire until the chocolate melts, then set aside and mix. Let cool slightly.


When it has reached a bearable temperature on the finger, add hydrated gelatin in 3 tablespoons of cold water.

Stir until smooth and leave to cool.

Beat the whipped cream and add the cold strawberry sauce.


Assembly:

We put each cream in a posh with a round end.


On a plate we place a syrupy countertop sheet and fix the cake ring around the sheet.

We start to put the cream, from the edge to the center, alternating the two creams.

Then put the cake in the fridge for an hour. Or if you're in a hurry like me, put it in the freezer for 15 minutes.

Then take out the cake and put another row of cream (where we had yogurt cream we will now put strawberry mousse and where there was mousse we will put yogurt cream, thus forming a chess).

Put another 10 minutes in the freezer and then cover with the other sheet of syrupy top and put in the fridge for a few hours, or overnight.

The next day we decorate the cake according to our preferences. I dressed the cake in sugar paste and decorated it with animals (also from sugar paste). Here you can find how to prepare sugar paste.


I chose to make animals, because Dragos likes them very much. I can't boast of a talent for modeling sugar paste, but the children were very excited and the animals were recognized (from small to large :)))
