I called it so simple because it is a relative of pots or rattatouille. It is full and tasty, it is made quickly and can be served in many ways. I chose some simple tagliatelle.
- 1 half small eggplant
- 2 green onion threads
- 1 new garlic head (ie from the green one but which has a large head and formed bulbs)
- 2 fresh white mushroom mushrooms
- 2 small white cabbage leaves
- 1 red kapia pepper
- 1 carrot
- 1/2 small jar of tomato paste (about 4-5 tablespoons)
- 2 tablespoons oil
- salt pepper
- green parsley
Preparation time: less than 60 minutes
RECIPE PREPARATION Vegetable dish:
Wash the vegetables well, peel the carrot and peel the mushrooms, remove the seeds and vinegar from the kapia pepper and the back. Finely chop all the vegetables and cabbage leaves. Grate the carrot. in 2 tablespoons of oil, mix well and towards the end add the tomato paste. Mix again and leave it on the fire for a while.
It is served sprinkled with green parsley and various garnishes, hot polenta, a puree with sour cream or pasta. I chose the pasta, boiled a roll of tagliatelle in salted water and then drained them under a short stream of cold water then being warm I still mixed them with a little melted butter. I found it very filling and tasty and in addition it is not difficult to make at all!
