Ingredient:
1 can of tuna in oil
1 small red onion
lemon juice to taste
salt pepper
a small, boiled potato

Put all the ingredients in the robot.
If the pasta is not thick enough, you can add a little more potato.

Spicy fish paste with avocado

Before ’89, the aperitif was called "fish paste”, Which sat in a place of honor next to the“ beef ”salad made with the Parisian pieces. Fish paste of those times requires few ingredients, relatively affordable: canned fish in oil and margarine, salt and pepper, possibly some onions. So I added avocado, plus a few more ingredients for the colored stain (spots).

What do you need?

  • 1 small can (90 g) of sardines in oil (possibly with lemon)
  • 1 can (185 g) tuna pieces in spicy oil
  • 2 anchovy fillets in oil
  • 1 well baked avocado
  • 1 piece of leek 10 - 12 cm (green part)
  • 1 red onion, small
  • 2 - 3 cloves of garlic
  • 3-4 cherry tomatoes
  • 1/3 greenhouse cucumber
  • ½ connection of green parsley
  • 1 small red hot pepper (chilli)
  • Juice from ½ lime (or from ½ small lemon, if you can't find lime)
  • Salt and pepper - to taste.

How do you proceed?

Take a large bowl in which you add one by one:

  • sardines drained of oil and crushed with a fork (do not throw away the oil, add it at the end if you find the mixture too "dry")
  • garlic peeled and crushed in the press
  • finely chopped red onion
  • leeks cut into quarters in length and then finely chopped
  • finely chopped and finely chopped cucumber piece
  • cherry tomatoes, also chopped
  • finely chopped parsley
  • avocado core, cut into small cubes (after adding avocado, sprinkle immediately with lime juice, so as not to oxidize
  • anchovy fillets cut into small pieces
  • pieces of tuna (drained of oil) crushed with a fork.

Season with salt and pepper, then mix everything well with a fork, until you get a sufficiently homogeneous paste. If necessary, add a little more sardine oil. Garnish as you know it and serve on pieces of toast as appetizers. I go with a shot of vodka or, better, tequila.

We have the robot version using the dough arms, or the manual version.

We put the meat mixture for the mititei paste, the baking soda and the spices in the bowl of the robot and we start to fry them. During frying, we also drip the bone broth, little by little, until we reach a creamier consistency, not as dry as the composition for meatballs, for example.

Cover the pasta for the little ones with fresh foil and put it in the fridge for 12-24 hours. During this time, the meat blends in with all the flavors and is perfect for preparing delicious small traditional dishes.
