This Indian side dish is excerpted from 'The Indian Cooking Course' by Monisha Bharadwaj

This delightful Gujarati side dish is served with main meals. It is sometimes served as an accompaniment to crisp, savory, and sweet Sunday breakfast snacks such as “ganthiya”, which are crisp wafers made with chickpea flour and spices, and “jalebi”, a rich sweet made with flour, deep-fried and soaked in sticky sugar syrup.

Ingredients of Gujarati sambharo

  1. Prepare 1 cup of chopped cabbage.
  2. It’s 1/2 Cup of chopped carrot.
  3. Prepare 3-4 of chopped green chilli.
  4. Prepare 2 tbsp of oil.
  5. Prepare 1/2 tsp of mustard seeds.
  6. You need 1/2 tsp of cumin seeds.
  7. Prepare 1/4 tsp of turmeric powder.
  8. You need Pinch of Hing/asafoetida.
  9. It’s To taste of salt.

Sambharo is a cooked salad (that's a fun oxymoron, isn't it?) made with tadka (tempering) and vegetables like grated carrots and chopped cabbage. The vegetables retain a bite—the only purpose.   1. Heat the pan add oil. When oil is nice and hot add pinch of hing, mustard,cumin seeds..

  3. When vegetables are half cooked add salt and stir it for couples of minutes..
  4. Serve it as a salad..
