Ingredients

  • 1 ounce dried porcini mushrooms
  • 4 tablespoons extra-virgin olive oil
  • 1 1/4 pounds large button mushrooms, halved
  • 1/2 cup finely chopped shallots
  • 1/2 cup chopped fresh chives
  • 1/2 cup finely chopped smoked ham (such as Black Forest)
  • 2 large garlic cloves, minced
  • 3 tablespoons fresh lemon juice

Recipe Preparation

  • Place dried mushrooms in medium bowl; add enough boiling water to cover. Let stand until mushrooms soften, about 45 minutes. Using slotted spoon, transfer mushrooms to work surface; reserve mushroom soaking liquid. Chop mushrooms.

  • Heat 2 tablespoons oil in heavy large nonstick skillet over medium-high heat. Add button mushrooms. Sauté until mushrooms are brown and juices evaporate, about 12 minutes. Add porcini mushrooms; stir 1 minute. Transfer mushroom mixture to medium bowl.

  • Add remaining 2 tablespoons oil to same skillet over medium heat. Add shallots and next 3 ingredients. Sauté until shallots are tender, about 2 minutes. Add mushroom mixture and 1/2 cup mushroom soaking liquid, leaving behind any sediment. Cover and simmer until mushrooms are tender, stirring occasionally and adding more soaking liquid if mixture is dry, about 20 minutes. Add lemon juice; season with salt and pepper. DO AHEAD Can be made 1 day ahead. Cover and chill. Rewarm over medium heat before serving.

  • Transfer mushroom mixture to serving bowl. Garnish with parsley sprigs.

Baked Eggs with Ham and Mushrooms

Divide the mushrooms and ham between the 4 ramekins, reserving some mushrooms for garnish. Pour a little passata into each one. Carefully break two eggs into each dish, sprinkle each one with cheese and seasoning.

Place the dishes on a shallow roasting dish, pour boiling water around them to cover half way up the ramekins. Place ramekins in the oven.

Check the baked eggs after 10 minutes. The egg white should be just set with the yolk still runny but if you prefer your egg a little more cooked, bake for another 2-3 minutes.

My son pretty much always takes a ham sandwich to school. He uses a hot dog bun, puts in a few slices of ham and then sliced black olives. He has been doing it for years. So we always have ham in our fridge. Which means, I am always looking for fun new things to do with it!

Hillshire Farm® Honey Ham is our favorite, and we have been buying it for years. I like that it’s made with no artificial flavors or preservatives, plus there are no added nitrates or nitrites. So I can feel good about him eating it every day.

Lately I have been buying the 1 pound variety pack that has both, turkey breast and honey ham, at Walmart. That way I can get what I like too, and he gets a little more variety in his life. Plus if you use Walmart’s Online Grocery Pick Up, you don’t even have to get out of your car. Talk about a life saver when it comes to grocery shopping. You can check to see if it is available in your area.

What is one thing that everyone likes? Pizza! So I decided to turn some leftovers into pizza and make the entire family happy. I like to take something that is already in our fridge and make it into something new. When you think of lunchmeat, you think of a sandwich, right? Well there are way more uses than just a sandwich! A white pizza for example.

I love mushrooms, and will always think of mushroom pizza as my favorite. So why not use my favorite white sauce, my beloved mushrooms, and then add ham to it. The ham is slightly sweet, salty, and a delicious addition. You could use your favorite pizza sauce or even Alfredo sauce for this ham pizza if you wanted. Whatever your family will like!

Sautéed Mushrooms with Smoked Ham - Recipes

LOX & CREAM CHEESE BAGEL

  1. Toast Original or Sprouted Bagel to your liking
  2. Spread cream cheese to the bottom half of the bagel
  3. Add 2-3 slices each of avocado and smoked salmon
  4. Top with a drizzle of extra virgin olive and a few capers
  5. Apply top of bagel

For the plated garnish we used a mixed variety of cherry tomatoes and capers. Lightly drizzle with extra virgin olive oil and a salt to taste.

GOURMET DELI SANDWICH

  1. Toast Original or Multigrain Sandwich to your liking
  2. Spread mayonnaise and dijon mustard to the bottom half
  3. Add oak leaf lettuce or similar
  4. 4 slices of spicy Calabrese salami
  5. 2-3 avocado slices
  6. 3 pieces, layered, smoked ham
  7. Spicy Monterey Jack cheese
  8. Apply top of Sandwich

For the plated garnish we used Strub’s Kosher Dill Pickles, halved and pitted Kalamata Olives with a sprig of wild oregano.

MULTIGRAIN SANDWICH BLT

  1. Toast Original or Multigrain Sandwich to your liking
  2. Add oak leaf lettuce or similar
  3. Spread a layer of mayonnaise as desired
  4. Add already cooked thick cut smoked bacon
  5. 2 slices, red tomato
  6. Apply top of Sandwich

For the plated garnish we used a Strub’s Kosher Dill Pickle, pitted Kalamata Olives and a mixed variety of cherry tomatoes, whole and halved.

GOURMET PESTO SMOKED HAM FLATBREAD (MAKES 2 FLATBREADS)

Best if baked on a pizza stone using convection heat.
Place pizza stone on middle rack and pre-heat oven to 450C.

While oven is heating, sauté mushrooms. Heat pan to high heat and grease pan using extra virgin olive oil. Once pan is hot, add 4 thinly sliced Crimini mushrooms to the pan. Sauté for one minute and add salt and pepper. Add 1 Tablespoon of water to pot and cover with lid for another 30 seconds. Once completed, remove lid and set aside to cool.

Prepare the following toppings:

  • ¼ cup of each sliced Kalamata and Picholine olives
  • ¼ cup thinly sliced sun-dried tomatoes
  • ½ cup of torn pieces of smoked deli ham (or as desired)
  • ½ cup of sliced Calabrese salami (or as desired)
  • 1½ cups 3-cheeses pizza blend (Mozzarella, Cheddar, Parmesan)
  • Small amount of parsley chopped for garnish
  1. Once oven reaches temperature, place frozen flatbread on stone and bake until crust has slightly browned. Use either Original or Multigrain flatbread.
  2. Add pesto base to flatbread. Spread evenly.
  3. Add pieces of smoked ham and Calabrese salami
  4. Add 3-cheese pizza blend
  5. Add the sautéed mushrooms
  6. Add sliced Kalamata and Picholine olives
  7. Add thinly sliced sun-dried tomatoes
  8. Return to oven and bake until cheeses are starting to bubble
  9. Remove from oven
  10. Evenly sprinkle parsley flakes over flatbread
  11. Drizzle extra virgin olive oil over flatbread

How To Sauté Mushrooms

The Best Sauteed Mushrooms Recipe starts out just like any other sauteed mushrooms recipe, with a bit of butter and garlic. However, the key is to not dump everything in at once.

  1. Place a large saute pan over medium heat. Add the butter and oil. Once the butter has melted, add the mushrooms.
  2. Allow the mushrooms to sear for 5 minutes , stirring to flip them over. Then add the garlic and salt and pepper to taste. Allow the mushrooms to sear another 5 minutes to develop a rich caramelized color.

3. Stir in the fresh thyme leaves and sherry. Lower the heat to medium-low and simmer for approximately 10 more minutes, stirring on occasion. The goal is for the mushrooms to absorb the sherry, leaving only a small amount of moisture in the pan.

4. Taste, then salt and pepper again if needed. Serve warm over meat or as a side dish!

1 ½ lb. John Morrell® Loop Smoked Sausage (Diced bite size)
2 c. Mild Cheddar Cheese (Shredded)
2 1/2 c. Seasoned Croutons
1/4 c. Green Peppers (Chopped & Sautéed)
1/4 c. White Onion (Chopped & Sautéed)
4 Eggs
2 1/2 c. Milk
1 8 oz. can Cream of Mushroom Soup (undiluted)
1 4 oz. Can sliced Mushrooms (drained)
3/4 tsp. Dry Mustard
1 tsp. Hot Sauce

Optional: Cherry Tomatoes and Parsley Sprigs to garnish

Preparation

Lightly grease a 13x9x2 baking pan, spread croutons in pan set aside. Sauté John Morrell® Smoked sausage and cook until lightly browned. Add green peppers and onions cook until soft. Drain off excess oil from sausage with a paper towel. Sprinkle John Morrell® Sausage and vegetable mixture over the croutons.

Combine Eggs and the rest of ingredients, mix well and pour over sausage. Cover and refrigerate at least 8 hours or overnight. Preheat oven at 325ºF. Bake uncovered for 50-55 min. Sprinkle with Cheddar Cheese and bake for 5 more min. Garnish if desired. Serve warm.
