RECIPE PREPARATION Plum and cinnamon cake:
Wash the plums well and remove the seeds. Put them in a bowl and put a tablespoon of powdered sugar and a pinch of nutmeg and cinnamon.
Beat the egg whites, then add the powdered sugar and beat until the egg white hardens and becomes a meringue.
Add the flour a little and mix with a light spoon until you incorporate all the flour.
Divide the composition into two bowls and in one add the cocoa and mix well. Prepare a baking form that we grease with butter and sprinkle a little flour. Pour the cocoa composition into the mold and level. We continue with the other white composition and pour it over the black one. Place the plums on top. Bake (preheated) for about 40 minutes. Remove, sprinkle a little cinnamon and leave to cool.

The market is full of plums at a very good price (about 2 lei kg) and you definitely have the rest of the ingredients in the house all the time.

& # 8211 100g old
& # 8211 an envelope of dry yeast
& # 8211 one or
& # 8211 200ml warm milk
& # 8211 2 sachets of vanilla sugar

I put all the ingredients in the bowl of the KitchenAid mixer and mixed for about 3-4 minutes, until I had a fairly thick, homogeneous, non-sticky dough. I let the dough rise for 30 minutes, then I spread it on the plate lined with flour and I placed it in a 20x30cm tray, lined with baking paper.
Over the dough I placed 1.5 kg of plums, cut in half, with the seeds removed. I pressed the plums a little, so that they fit well in the dough, then I powdered them with 3 tablespoons of brown sugar and 2 tablespoons of cinnamon.
For the baked dough I mixed 300g of flour, a packet of butter (200g), 150g of sugar and a teaspoon of vanilla essence. I mixed them for about 3 minutes with the KitchenAid mixer, at high speed, until I had a hard dough, quite crumbly. I broke the pieces of dough and sprinkled them over the plums, then I put the tray in the oven heated to 180 degrees, 30 minutes.
The cake is very good and fresh out of the oven, but also after it cools down a bit. After cooling, you can powder it with vanilla powdered sugar, mixed with a little cinnamon. It is a super fragrant cake, consistent and large enough for a large family and guests. You can replace plums with grated apples and mixed with a little sugar and cinnamon, compote cherries, nectarines, etc. If you serve the cake hot, just taken out of the oven, you can put a glass of vanilla ice cream on top. After it has been taken out of the fridge, it is divided into 2 pieces. Part of the dough with a rolling pin is stretched and placed in a round tray with a diameter of 26 cm. Leave the rest of the dough in the fridge. The dough should be slightly raised on the edges of the circle about 3-4 cm from the base. It is pricked from place to place with the help of a fork and then put in the oven for approx. 15-20 minutes at a temperature of 180 ° - 200 ° C.
The plums cut in half are mixed with the sugar and left for about 30-50 minutes in a sieve to drain well. From the juice formed from plums, about 250 ml is mixed with food starch, cinnamon and peel of 1 lemon.
After the dough has been removed from the oven and allowed to cool, add the plums over which the liquid composition formed with the plum juice is placed and then spread the rest of the dough, left cold, which puts a lid on the plums from form. Place in the oven for another 25-30 minutes at a temperature of 210 ° C.
