Mix the egg whites with a pinch of salt. Then add in turn mixing after each: sugar, egg yolks, oil and milk. Finally, add the flour mixed with baking powder and cocoa, using a spatula. Pour the composition into a 26 cm round tray, lined on the bottom with baking paper and greased with a little butter on the edges.

Bake in the preheated oven at 175 degrees for about 35 minutes. We check with a toothpick if the top is baked.

Cream: mix the whipped cream with the sugar and put it on the fire until the sugar melts and starts to boil. Remove from the heat and add the chopped chocolate and stir until the chocolate melts.

Put the cream in the fridge for 1-2 hours until it hardens.

We take it out of the fridge and mix it with the mixer until it becomes fluffy.

Separately, mix the whipped cream in a bowl until it hardens, then gradually add the chocolate cream until it is all incorporated.

We cut the pitted cherries into pieces and put them in a bowl on the fire together with the sugar. When it starts to boil, add the starch dissolved in a little water (about a tablespoon) and leave it on the fire until it thickens, stirring.

Pour the icing over the cake, letting it flow on the edges and put it in the fridge until the icing hardens.

Take the cake out of the fridge and decorate it with the remaining cream. We put colored candies, chocolate, etc. on top. Mine was dedicated to a child and I tried to make him a little happier.

We keep the cake in the fridge until serving.

It is good to stay at least 2-3 hours in the refrigerator before serving or even overnight.
