I researched a bit about Scandinavian gastronomy. I found out that fish, especially salmon and herring, are often found in the Nordic diet. So, it was very easy for me to choose an area-specific recipe that would be elegant, because it had to come as an inspiration for those who want to prepare something special for Valentine’s Day.
The recipe for tagliatelle with salmon and green peas is very simple to make, it is prepared in a short time, the ingredients are available to anyone. If you want to prepare it for a special occasion, I highly recommend it. Regardless of the occasion, your partner, family or loved ones will praise your work.

2 medium slices of salmon
250 gr. fresh noodles
2 handfuls of green peas (if you don't like peas you can skip it or you can use spinach or mushrooms)
1-2 cloves of finely chopped garlic (or as desired)
200 ml. cooking cream (I used one with 32% fat)
slightly chopped dill (to taste)
salt & pepper
Optional: grated parmesan, which you put at the end over the preparation
Put two pots of water and a little salt on the fire in which to boil the tagliatelle and green peas. Observe the cooking time of the pasta written on the box. The peas should be boiled for 6-8 minutes.
Season the salmon with salt and pepper. Put olive oil in a non-stick pan and fry the salmon for 2 & # 8211 2:30 minutes on each side. Remove the salmon and place it on a plate. Let it cool a bit, then be sure to remove all the bones from it. First remove the skin from the edge, then the bony middle, then break it into pieces, feeling with your fingers behind the bones.
After this procedure, sauté 1-2 cloves of garlic in the same pan, but also in the same oil in which you cooked the salmon (we do not want to lose all the flavor of that oil). After 20-30 seconds after the garlic has hardened, add 1 tablespoon full of water from the pot in which they cooked the pasta and let it boil a bit.
Put the cream for cooking in the pan, let it boil first, then add the salmon and green peas that you boiled before. Mix lightly with a wooden spatula so that the salmon pieces do not break. Simmer for another 2 minutes, then add the cooked dente al dente.
Squeeze the juice from ½ lemon, put the chopped dill, mix a little and leave on the fire for approx. 1 minute. Taste the sauce and see if you need more salt. Cover the pan with a lid and set it aside to blend all the flavors.
Serve these tagliatelle with salmon and green peas with great appetite along with a white wine and pleasant company!
Heat the oven to 220 ° C / 428 ° F / Gas Mark 7. Put the salmon on a lined baking tray and cook in the oven for 15 minutes.

I hadn't made pasta in a long time, so today at noon I got everything I needed and here I am ready in the blink of an eye with a generous portion of delicious and undeniable delicious tagliatelle.
- 300 gr. fresh tagiatelle
- 150 gr. smoked salmon
- 250 ml. sour cream for cooking
- 20 gr. parmesan race
- 10 tarragon leaves
- 4 basil leaves for garnish
1 In a 2-liter pot, boil enough water with salt to prepare the pasta, which will be ready in just two minutes from when the water starts to boil.
2 Break the smoked salmon into small pieces and chop the tarragon leaves.
3 Put on a low heat a small pan in which you add the cooking cream, and when it heats up enough add the 20 gr. grated Parmesan cheese and stir continuously for 2-3 minutes, until it melts and forms a homogeneous sauce.
4 Season as you like with salt and pepper, then add the fresh tarragon leaves to the cheese sauce.
5 Strain the pasta quickly and mix it with the warm sauce, mixing it well to be "dressed" completely.
6 Arrange on plates with pieces of smoked salmon on top and decorate with fresh basil for extra flavor and taste.

Ever since I've been the happy owner of a pasta machine, I've been trying to experiment with all sorts of combinations to keep up with the production of tagliatelle and fetuccine (the machine's first accessory). By far my favorites, I especially like tagliatelle with creamy white sauces. The combination with smoked salmon is tasty, fast and with few ingredients. the perfect option for a dinner during the week.
250 grams of fresh noodles
400 ml sweet cooking cream
100 ml fermented cream
2 tablespoons chopped green parsley
freshly ground pepper to taste
To boil the tagliatelle, boil 3 liters of salted water. When the water boils, add the pasta. Boil according to the instructions on the package. Fresh pasta has an average cooking time of 2-4 minutes. I cook the ones I made at home for 2 minutes.
Meanwhile, in a wok or saucepan, fry the chopped garlic cloves in butter.
Add smoked salmon, cut into strips, and white wine. Allow the alcohol to evaporate over high heat and add the sweet and fermented cream.
When it starts to boil, add the cooked pasta and drain well. Stir, add salt and pepper to taste (be careful how salty the salmon is) and chopped parsley.

How to prepare salmon pasta
